3 cups sugar 3 to 4 heaping spoons of coco powder 1 can evaporated milk
Put the sugar in a heavy pot, I use an old pressure pot. Add the coco and mix with the dry sugar first. Then add the can of evaporated milk and begin heating slowly. On a gas stove start at the lowest setting. On an electric start at medium. Hang a candy thermometer on the inside of the pot low enough for the end to be submerged in the candy but not touching the bottom of the pot. Heat to "soft ball" stage, 240-242 degrees, raising the heat only by small increments when and if necessary and stir it a lot. Remove from heat and add
2 pats of butter 1 teaspoon vanilla 2 tablespoons corn syrup
It can be beaten by hand until your arm drops off or you can have an electric mixer handy and beat the fudge with it. When it starts to thicken a bit pour into a buttered dish. Cut to score before it gets cold. Eat and enjoy.
