1 lb (4 sticks) butter, softened 1 cup sugar that has been processed for about 1 minute in food processor 2 teaspoons vanilla extract 3 1/2 cups flour 1/2 cup corn starch 1/4 teaspoon salt 1 cup pecans, finely chopped
Cream softened butter in large mixing bowl until light and fluffy. Gradually add sugar. Add vanilla. Sift together dry ingredients (except for the nuts) and slowly add to butter mixture and mix until well blended. Mix in nuts. Roll about a fourth of the mixture up in foot long strips of wax paper, forming into rolls approximately 2 inches thick and freeze. Slice thin and bake in a preheated 325 degree oven for approximately 20 minutes or until lightly tanned around the edges. Cool. Makes about 5 dozen 2 " cookies.
