Today I am cooking a pork shoulder with the bone in. It's a 7 pound piece of meat so I expect to re purpose it several ways to provide us with about 5 dinners.
There are lots of great ways to prepare this cheap piece of meat but, I am simply going to roast it in the oven with a little dry rub at 400° for 20 minutes. Then reduce my temp to 325° for 3 hours. I have made a reduction of red wine, brown sugar, pears and some chili flakes which I will baste it with for an additional hour of cooking time. I will be pairing this with roasted potatoes and low cal candied carrots.
However you choose to cook this piece of meat (if you ever do one) just remember to overcook it! You cannot ruin this cut by over cooking since it will fall apart before you can ruin it.
Cooked in a Crock Pot for 8 hours is another great method.
