BLACK BEAN AND KALE SOUP
Ingredients
extra virgin olive oil 8-10 cloves minced garlic 1 med-large onion, coarsely chopped 1/2 pond chopped ham (I used 2 Italian-style sausages) 2 quarts chicken broth 1 small bunch of kale 1 large can of Black Beans, drained and rinsed
Directions
Heat the olive oil in a stock pot.
Add the garlic and onion and and cook over a low flame until onion is translucent.
Add the chopped ham.
Cook about 5 minutes more and then add the chicken broth and heat over medium flame.
While the broth is heating, wash & trim the kale and chop it coarsely.
Add to broth and continue cooking for about 15 - 20 minutes.
Add the black beans and cook another 15 - 20 minutes.
Garnish with croutons.

The original recipe called for a large bunch of kale, I cooked half of that but will use less in the next batch.
The original recipe called for the addition of crumbles of feta cheese before serving.
This soup freezes beautifully.
