This recipe comes with a story.
Jersey is famous for its diners. But one of the most famous was the Claremont Diner in Verona. The place started small, but eventually grew to seat 400. The food was incredible, but they were best known for 2 items ..... the Claremont Salad and their cheesecake.
By the time your butt hit the seat in your booth, there was a small metal tub of the salad placed on your table ..... so you could have a nosh while you ordered your meal. It's sort of like a health salad and it's sort of like a cole slaw without the mayo and many variations exist - but they are pale imitations. The original is still the best!
It's sweet and it's sour and it's crunchy and it's soft and it's chunky ...... and when I make it, I have a list of people to call ..... they come over with containers for me to fill with the salad!
Claremont Salad
2 tablespoons sugar
3 tablespoons vinegar
2 tablespoons salad oil
1 tablespoon of water
1 teaspoon of salt
1 cucumber (sliced on the diagonal)
1 carrot (sliced on the diagonal)
1 green pepper (sliced)
1 bermuda onion (sliced)
3/4 head of cabbage (shredded)
Shake the sugar, vinegar, salad oil, water, and salt together in a large jar and pour the mixture over the vegetables. Leave the vegetables and mix at room temperature for 2 - 4 hours.
Put it in the refrigerator over night. Done, enjoy !!
This recipe is easy to double or quadruple ..... and it stays well until the last bit is gone (which isn't too long in my house!)
No trip to the Claremont was complete without a slice of their cheesecake for desert.
The original owners had a pastry chef who worked at Lindy's and the Claremont's cheesecake was even better! That chef's son is now with the Carnegie Deli in NYC, and his father's recipe can be found on their website ..... or you can just order one!

The diner, the salad and the cheesecake are treasured memories to many, many people ...... but I will always remember love that place because that is where I went on a blind date on August 21, 1971 -with my husband!
And we can't "go home again" because the diner burned down years ago.
