I have thousands of recipes in my collection. I noticed this one earlier this week and tried it tonight. It was a big hit!!
Zippy Chicken
4 skinless/boneless chicken breasts or a 2 lb. chicken, cut in 8ths 1/3 cup bottled Italian dressing 1 cup raw rice 1 bag frozen vegetables (I used mixed veggies, but a Chinese or Italian combo would work, too) 1 can French's French Fried Onion rings 2 cups chicken broth 1/2 tsp Italian seasoning
~Preheat oven to 400o. ~Put chicken in 8X12 baking dish and cover with dressing. Bake uncovered for 20 minutes. ~Put rice, veggies and half the onions in the dish. Add the broth & seasoning and mix well so the rice & veggies are over, under & all around the chicken. ~Cover loosely with foil and bake for another 25 minutes. ~Top with the rest of the onions and bake about 5 - 10 minutes more, making sure that the rice has absorbed the liquid. ~Let it stand - covered - for 5 minutes and serve to raves!!

I made this dish and it was very good. I made it with brown rice and doubled the ingredients, so there would be leftovers. But there were no leftovers, since the 5 people I had over all had second helpings.

I have made this recipe before but I have never added the onion rings before. I will make this in the future one day.Thanks for posting this.
