We have an abundance of kale growing, so I've been trying different ideas and recipes.
This was easy and surprisingly yummy.
Krispy Kale chips!
Wash a bunch of kale and tear out the stems, making strips and pieces out of the leaves. (they will shrink so about twice the size of a potato chip will do)
Let them dry completely. Then put them on a cookie sheet and drizzle with olive oil, (1-2 tablespoons) and a light sprinkling of salt, toss until the leaves are coated, spread them out and bake until crispy, about 20 minutes, turning them 1/2 way through.
If the leaves are wet or too densely layered they will steam themselves, not get crisp.
Strangely delicious! Not a crumb was left.
Eat more Kale!
