From WTF??? at the greengrocer .........to YUMMY! on the table. They really are a deep purplish blue - all the way through!The cold lemon-water soak, as recommendedMashed - with butter and chopped chives, even if you can't see them!Plated with steamed broccoli /carrots and Cajun tilapia. DELICIOUS!

And on a sort of related side note, We are in the process of converting about a third of the greenhouse into aquaponics beds so we can be more serious about raising larger tilapia.

I wouldn't mind buying one of these potatoes and trying them myself if I could find out who sells them in my area.

Do you have any farmer's markets? Or small farms that sell a variety of produce? Ask your produce person at the grocery, they might carry them from time to time, our standard grocery has them, but not year round.

Depends on the variety of purple/blue potato. The kind we grow are denser than the russets and are great for boiling and roasting. I think they taste kinda purple, lol, a buttery creamy kind of purple!
We've got 5 kinds of potatoes growing, we expanded the veggie garden in order to do so. They are sprouting up now. I'm so excited I'm gonna be a potato hoarder.
