A recipe from our Farmer's Market: This was just delicious. I used sweet orange tomatoes, zucchini instead of cucumber. I added sweet red pepper. I chopped it in the food processor.
I'm trying this again with Thai orange pepper instead of hot red, and cinnamon basil instead of cilantro. :::waiting for the peppers to turn orange:::
Peach Salsa
2 fresh soft peaches chopped
3 medium size tomatoes chopped
1 medium sized cucumber
1/2 medium onion diced
1 hot pepper (hotness to your preference) minced
2 Tablespoons (or more) lemon juice
Some chopped fresh cilantro or ground coriander seed (optional)
Salt and pepper to taste
Just chop everything as described above, toss it all in a bowl, mix it around well, taste and add more lemon juice, cilantro, and/or salt and pepper until it meets your expectations of greatness! Toss it in the fridge for a few hours or overnight, the flavors meld together better after a bit of time in the fridge marinating together.

I made a batch this morning with lemon basil instead of cilantro, roasted hot peppers and caramelized red onions. I used just a pinch of salt and pepper, I find it enhances the fruit flavors so well. It was delicious, it's all gone.
Getting more peaches tomorrow, going to try it with the cinnamon basil.

Getting more peaches tomorrow, going to try it with the cinnamon basil. I could do the onions but not the peppers because I don't need the heart burn .
