Chicken Mole
EVOO Chicken thighs &/or breasts 3 tablespoons Lime juice 1 Cup chicken broth 1 can diced tomatoes 3 tablespoons smooth peanut butter 1/3 jar Dona Maria Mole Sauce
Preheat oven to 375o.
Brown chicken in skillet. Remove to baking dish as done.
Reduce the heat to low--medium and deglaze the pan with the lime juice. Add the mole sauce, the tomatoes & the peanut butter. Stir constantly until melted together and smooth.
Cover the chicken with the sauce . Bake for 20 minutes, covered with foil, then remove foil and bake for an additional 10 minutes.
Garnish with cilantro & sesame seeds, then serve.

Serve with arroz amarillo (yellow rice). I also prepared Calabacitas as a side dish (recipe to follow.)
