Calabacitas
1 tablespoon EVOO 1 large onion, chopped 3 - 5 cloves garlic, minced 4 small zucchini cut into coins & then halved or quartered 1 can whole kernel corn with peppers and chilis (Del Monte makes this) 1 can black beans - rinsed & drained salt to taste
Heat EVOO in a large skillet over med-high heat. Add onion & garlic and saute until transparent, stirring continually.
Add zucchini and saute until softened.
Add corn mix & beans and heat through, add salt as needed - to your taste. (I didn't add any - nobody missed it!)
Serve warm.

The recipe looks great now that I know what's in it. I would leave out the chilies though. You can't omit the chilis. Del Monte makes the item ..... the can contains whole kernel corn and peppers and chilis.
There is very little heat, but it spices the dish gently. With the onion, 4 zucchini, the corn and the black beans - the chilis don't add up to very much.
