Just tried these today and they are pretty good. I'm always blessed with yellow squash because the deer won't mess with the plants. Squash Patties 2 cups finely diced squash. 1 cup finely diced onion 1 egg 1/2 cup plus 1 T flour salt pepper oil for frying.
Mix everything up except the oil. Drop by spoonfuls into hot oil and fry until brown, turning once.

my sister used to "rent" a corner of her friend's yard for a garden. she lived in a townhouse with postage-sized back yard and no sun. she did all the garden work and shared the harvests. one summer she was up to her butt with zukes... aren't they pretty much the same as yellow squash? she shredded up a ton of zukes and measured them out. then into freezer. frozen in amounts just right for a loaf of zuke bread.

You're right, it was cup. I fixed it. Zucchini tends to be more adaptable than yellow squash. You can turn it in to a lot of other things. I never grow it because most folks wind up blessing me with their over flow. I like to use it to make "mock pineapple". That's a canning recipe that uses chunked zukes and pineapple juice to make what actually tastes like canned pineapple.
